Something about living in the Tex part, and going to the Mex part often. The Hungry Mexican met most of our needs: we didn't expect to find something this nice in Dublin. I had the Chimichanga plate, which was a bit unique in that well, it's not deep fried like a chimichanga, but baked, so it actually was a bit healthier (while still crispy), and the filling of shredded beef was very good. I could imagine eating this dish in downtown Austin, with the capital in sight (looking at you Texas Chili Parlour). My wife had the chicken fajitas, and we both decided they were missing something: maybe lime, maybe some more dried spice, but the meat quality was superb, much much finer than most any Tex-Mex joint I've been to outside of very high end restaurants (I also noted that there were not a lot of peppers on the plate, maybe a sourcing thing). She really enjoyed the pico and pineapple salsas. The guacamole was also unique in a non-authentic sense, but I discount that for probably difficulties in obtaining consistent and cost effective avocados.
